Rolled sushi––known as maki––is an increasingly popular Japanese dish. The ingredients (usually seafood and vegetables) are combined with vinegared rice and rolled into pressed seaweed paper called nori, which is sliced into circular-shaped pieces and dipped in sauce. Contrary to popular perception, sushi is actually not raw fish, which is known as sashimi. Sashimi is sometimes used, but this is not always the case.
